Happy Valentine’s Day!

Rick texted me this morning with this message…

“25 Years.”

We went on our first date 25 years ago.

I had chicken cacciatore, he had linguini & clam sauce.

He was quite the charmer, let me tell you.

He had me at…”Pass the salt, Babe.”

Okay…enough of that mushy stuff.

We need to talk beans.

Chicken Chili Recipe

Cooking with white beans isn’t really new to me.

I’ve used them for many dishes in the past.

Beans & greens, pasta fagioli, etc.

I actually prefer white more than kidney beans or black beans.

They are nuttier, the skin isn’t so thick, and they don’t bloat me as much.

So, I made up this “Chicken Chili” recipe on my own.

It’s healthy, it’s tasty, and very easy.

Chicken Chili

Chicken Chili

Ingredients

  • 2 32oz. chicken broth
  • 3-4 raw chicken breasts with or with out bone
  • 2 15.5 oz. cans of canelli or great Northern beans not drained
  • 2 15.5 oz. cans of garbanzo beans drained
  • 1 small onion diced
  • 1/2 of a green pepper diced w/seeds (seeds are loaded w/ fiber)
  • celery hearts or 1 stalk diced
  • 1/2 of a leek sliced
  • 2 med. tomatoes diced
  • 1/2 c. fat free plain Greek yogurt + more to garnish w/ (sour cream will work too)
  • 5 cloves of minced garlic (or more)
  • 2 tbls. fresh lime juice
  • 1 tbls. parsley
  • 1/2 tsp. thyme
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1/2 tsp. onion powder
  • S&P to taste
  • 1 sliced avocado
  • *serve w/ restaurant style tostidos

Instructions

Pour chicken stock in large pot. Add chicken and allow to cook through. Skim foam off the top. Remove chicken and let it cool. Add all the remaining ingredients except the avocado. Let it all simmer. Shred the chicken by pulling it apart with your clean hands. Add to pot. Let it all simmer at least 30 or more minutes. Add a little water if you want it thinner or if it reduces too long. Top with sliced avocado and a dollop of fat free Greek yogurt or sour cream.
